Rarely a week goes by without tacos making an appearance on my dinner table. They’re too easy to resist—I don’t have to worry about a thing except what’s going inside a tortilla. Perfect for busy weeknights when multiple side dishes and involved preparation are not conducive to happiness.

I’ve created three easy and delicious taco recipes that hit all the quintessential taco marks without taking all day to make. From chili poached chicken with crunchy curdito to smokey mashed pinto beans and spicy charred shrimp, these tacos are full of flavor and low on effort.
