Spiced Cauliflower Burgers

"WHERE'S THE BEEF?" SAID NO ONE EVER AFTER TRYING THIS BURGER. No barbecue is complete without a veggie dish that impresses vegetarians and dedicated carnivores alike. When the spice rub on the cauliflower meets the flames of the grill, plain ol’ cauliflower reaches ultimate burger status.

Ingredients

  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon ground mustard
  • 1 teaspoon smoked sweet paprika
  • ¼ cup olive oil
  • 2 heads cauliflower, trimmed and cut into ¾-inch thick steaks
  • ¼ cup Vegenaise or mayonnaise
  • 4 hamburger buns, split
  • ¼ cup fresh cilantro
  • 1 small cucumber, sliced

Instructions

Makes 4 servings

Heat grill to low. Combine cumin, coriander, ground mustard, and paprika in a small bowl. On a large plate, combine 3 teaspoons spice mixture and oil. Coat cauliflower steaks in oil mixture. Grill, turning occasionally, until nicely charred and crisp-tender, about 15 minutes. Combine remaining 1 teaspoon of spice mixture and Vegenaise. Spread mixture on each bun and top with grilled cauliflower, cilantro, and cucumber.
