Almond Chocolate Chip Cookies

Ingredients

  • 2 cups almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 4 tablespoons grassfed butter, softened
  • ¼ cup honey or pure maple syrup, grade B
  • 2 teaspoons pure vanilla extract
  • ½ cup bittersweet or semisweet chocolate chips

Instructions

Makes about 16 cookies

Heat oven to 350°. Place almond flour, baking soda, and salt in a food processor and pulse to combine. Add butter, honey, and vanilla and process until a dough forms. Transfer to a large bowl and stir in chocolate chips. 

Form dough into 1½-inch balls and arrange on parchment-lined baking sheet, press down lightly to flatten. Bake until set and bottoms are golden brown, 7–10 minutes. Let cool on baking sheet for 10 minutes before transferring to a wire rack to cool completely.
